KIDDOCJJ's SPINACH LASAGNE

SPINACH LASAGNE with home made WHOLE MILK RICOTTA, FRESH SPINACH and home made EGG PASTA

  WHAT YOU NEED   -  mixing bowl, baking pan, sharp knife, large frying pan   INGREDIENTS   -  large brown onion, chopped fine  -  3 large garlic cloves, minced  -  12 ounce bag spinach  -  3 eggs  -  1 cup grated parmesan, plus more for sprinkling  -  12 ounces ricotta cheese  -  1 1/2 cups of your favorite red sauce (I use Rao's)  -  1/2 pound lasagne noodles, fresh or dried  -  handful fresh herbs (I picked chives, basil and parsley)

-  1 1/2 cups of your favorite red sauce (I use Rao's)

-  1/2 pound lasagne noodles, fresh or dried

-  handful fresh herbs (I picked chives, basil and parsley)

  INSTRUCTIONS   1.  Heat a frying pan over medium, add 1-2 TB olive oil, and saute the onions until translucent.  2.  Add the garlic and saute for another minute or 2 until fragrant.

 3.  Add 1/2 the spinach to the pan and stir with tongs until mixed with the onions and wilted.  Add the remaining spinach and cook on medium low until spinach is very wilted and all visible moisture is gone from the pan.  4.  Take off the heat and set aside to cool a bit.  5.  Preheat the oven to 400 degrees.

 8.  Add a tsp of ground pepper and 1/2 tsp of salt and mix well.

 9.  Ladle 1/4 cup or so of your favorite red sauce in the bottom of your baking pan and spread all over.  10.  Top with a layer of egg pasta sheets (if you are using dry pasta, make sure to boil them first before this step).

 11.  Next, add 1/3 of the cheese mixture and spread evenly, then 1/2 of the spinach, and another 1/2 cup of red sauce.

 12.  Sprinkle this with some added parmesan.  13.  Build another layer:  noodles, cheese mixture, spinach, tomato sauce and parmesan.

 14.  The last layer is noodles, ricotta mix, tomato sauce and a generous amount of grated parmesan.  Into the oven at goes, uncovered, for 40 minutes (on 350).  If your pan is pretty full, place the baking pan on a larger sheet to catch any possible spills.

 15.  Once it's out of the oven, let it sit, loosely covered with foil, for 10-15 minutes to set.  It's easier to cut that way.
