HOW TO MAKE BIGA (italian starter)

Before we can embark on making our Ciabatta next week, I want you all to create a BIGA - basically an Italian starter.  All you need is flour, a little salt, water, and a couple of tablespoons of fresh bread dough or starter. Here's the video of STEP ONE:
