EASY BLACK BEANS

these beans go virtually with any cuisine - whether latin, caribbean, punjabi or even creole

just vary the proportions of spice, and you have an easy way to create a delicious side in minutes!

INGREDIENTS (Caribbean/Latin style):

  • 2 cans black beans, drained and rinsed

  • 12 ounces of your favorite beer (or stock)

  • 1/2 red onion, diced finely

  • 1/2 cup (handful) chopped cilantro

  • 1/2 cup prepared salsa (I like tomatillo)

  • 1 TB ground cumin

  • Salt and pepper to taste

INSTRUCTIONS:

  1. Put all ingredients into a pot, mix and simmer on low until liquid is almost evaporated. Top with more chopped cilantro and a squeeze of lime.

PUNJABI STYLE:

  • Add a TB of curry powder and 1/2 cup mango chutney (instead of salsa) to the mix. Finish with chopped cilantro, peanuts and mint on top.

CREOLE/CAJUN STYLE:

  • Instead of cumin, use a TB or 2 of creole or cajun seasoning. Sub in chopped parsley for the cilantro, and green or white onion for the red. Top with lots of Crystal Hot Sauce!
